ONE month to go until the Kangaroo Island Marathon Running Festival powered by Kangaroo Island Oats!
It's going to be a fantastic day with the 42km marathon, 21km half-marathon and 10km runers all making their way in and out of the Flinders Chase National Park at the stunning western end of KI!

'Gather Round' doesn't need to be over... let's gather round and bake together as we head into Anzac Day next week! These biscuits are special in our nation for the way they were shared in parcels from homes in Australia and New Zealand, to the Soldiers on the frontline during the World Wars. What a great way for families to 'gather round' and remember. 🌺

Traditional Anzac Biscuits

Ingredients:
1 cup Kangaroo Island 'Rolled' Oats
3/4 cup sugar
1 cup shredded coconut
1 cup plain flour
155g butter
3 tablespoons golden syrup
1/2 teaspoon bi-carb soda
2 tablespoons hot water

Directions:
1. Preheat oven to 175 degrees celcius
2. Combine oats, sugar, coconut and flour in a bowl
3. Melt the butter and golden syrup in a saucepan over low heat
4. Mix the water and bi-carb soda together, add to the melted butter and mix through the dry ingredients
5. Roll mixture into 50c-piece sized balls and space them out on a lined oven tray. Make sure there's at least 3cm between each ball as they will expand while cooking
6. Cook until lightly coloured (approx. 12-15 minutes). Cool on the tray and then store in an airtight container.
