Apricot, Oat and Date Bliss Ball's

These mini bites have become and absoloute favourite. They are a delicious healthy snack for an afternoon pick me up, a great school lunchbox treat or a ‘feel good’ sweet fix šŸ‘.
And they only contain 5 simple ingredients!

Ingredients

1 cupĀ Kangaroo Island ‘Quick’ Oats

200g Dried ApricotsĀ  (Australian dried apricots will give the best flavour)

14 Medjool Dates, pits removed

1/4 cup desicated coconut

2 Tablespoons Coconut Oil

2 Tablespoons water

Extra Coconut for rolling balls in

Directions

  1. Place all ingredients into a food processor (Thermomix is perfect for this is you have one). Mix until mixture is crumb like.
  2. Take spoonfuls of mix and roll into balls (wet hands slightly to aid in the rolling process).
  3. Finish by rolling in extra coconut.
  4. Refrigerate for 2 hours before eating.
