These mini bites have become and absoloute favourite. They are a delicious healthy snack for an afternoon pick me up, a great school lunchbox treat or a ‘feel good’ sweet fix .
And they only contain 5 simple ingredients!
1 cup Kangaroo Island ‘Quick’ Oats
200g Dried Apricots (Australian dried apricots will give the best flavour)
14 Medjool Dates, pits removed
1/4 cup desicated coconut
2 Tablespoons Coconut Oil
2 Tablespoons water
Extra Coconut for rolling balls in
- Place all ingredients into a food processor (Thermomix is perfect for this is you have one). Mix until mixture is crumb like.
- Take spoonfuls of mix and roll into balls (wet hands slightly to aid in the rolling process).
- Finish by rolling in extra coconut.
- Refrigerate for 2 hours before eating.
